Asparagus tortilla

Supplies:

  • 500 gr AAA or AA asparagus
  • 4 tablespoons of olive oil
  • 50 gr manchego (cheese)
  • 4 eggs
  • salt, freshly ground pepper
2 persons
vegetarian main course

Preparation method:

Peel the asparagus and cut diagonally into 3 cm pieces(keep dots separate). Heat oil in frying pan andfry the asparagus pieces on a moderately high heat for about 2 minutes.Add asparagus tips and fry for another 3 minutes.
Cut cheese into cubes. Beat eggs in a bowl with salt andpepper, stir in cheese. Egg mixture on asparagus in the panpour and let it set covered on low heat in about 10 to 15minutes. Place plate on pan, turn together and tortilla on topsliding board.Cut tortilla into wedges and arrange on 2 plates.
Serve with brown baguette and green salad.
